GRILLED VEGETABLE SKEWERS

Ingredients

1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 zucchini, sliced into rounds
1 yellow squash, sliced into rounds
1 red onion, peeled and chopped
1 tablespoon olive oil
1 teaspoon dried oregano
Salt and pepper, to taste

Directions

Preheat the grill to medium-high heat.
Thread the chopped vegetables onto skewers.
Drizzle the olive oil over the skewers and sprinkle with dried oregano, salt, and pepper.
Grill the skewers for 10-12 minutes, turning occasionally, or until the vegetables are tender and lightly charred.
