Ingredients
2 tablespoons butter
2 leeks, white and light green parts only, chopped
4 large potatoes, peeled and diced
4 cups chicken or vegetable broth
1 cup heavy cream
Salt and pepper, to taste
Directions
In a large pot, melt the butter over medium heat.
Add the chopped leeks and sauté for 5-7 minutes, or until they are softened.
Add the diced potatoes and broth to the pot and bring to a boil.
Reduce the heat and simmer the soup for 20-25 minutes, or until the potatoes are tender.
Use an immersion blender or transfer the soup to a blender and puree until smooth.
Stir in the heavy cream and season with salt and pepper to taste.
Serve the soup hot.
