ROASTED GARLIC PARMESAN POTATOES

Ingredients

2 pounds baby potatoes, halved
3 tablespoons olive oil
4 garlic cloves, minced
1/4 cup grated Parmesan cheese
1 teaspoon dried thyme
Salt and pepper, to taste

Directions

Preheat the oven to 400°F.
In a large bowl, combine the halved potatoes, olive oil, minced garlic, Parmesan cheese, dried thyme, salt, and pepper.
Toss the potatoes until they are well coated.
Spread the potatoes out in a single layer on a large baking sheet.
Roast the potatoes in the oven for 30-35 minutes, or until they are tender and lightly browned.
