Ingredients
4 salmon fillets (6 oz each)
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 mango, peeled and diced
1/2 red onion, diced
1/2 red bell pepper, diced
1/2 jalapeño pepper, seeded and minced
2 tablespoons fresh cilantro, chopped
1 lime, juiced
Directions
Preheat the grill to medium-high heat.
In a small bowl, whisk together the olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
Brush the spice mixture over the salmon fillets.
Grill the salmon for 4-5 minutes per side, or until it is cooked through.
While the salmon is cooking, make the mango salsa. In a medium bowl, combine the diced mango, red onion, red bell pepper, jalapeño pepper, cilantro, and lime juice. Stir well to combine.
Serve the grilled salmon with the mango salsa.
