Ingredients
2 cups butternut squash, peeled and cubed
2 cups Brussels sprouts, trimmed and halved
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 red onion, peeled and chopped
2 tablespoons olive oil
1 teaspoon dried thyme
Salt and pepper, to taste
Directions
Preheat the oven to 400°F.
In a large bowl, combine the butternut squash, Brussels sprouts, red and yellow bell peppers, and red onion.
Drizzle the olive oil over the vegetables and sprinkle with dried thyme, salt, and pepper.
Toss the vegetables until they are well coated.
Spread the vegetables out in a single layer on a large baking sheet.
Roast the vegetables in the oven for 25-30 minutes, or until they are tender and lightly browned.
