GRILLED CHICKEN SALAD

Ingredients

1 pound boneless, skinless chicken breasts
6 cups mixed greens
1/2 cup cherry tomatoes, halved
1/2 cup sliced red onion
1/2 cup sliced cucumber
1/4 cup chopped fresh cilantro
1/4 cup lime juice
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper, to taste

Directions

Preheat a grill or grill pan to medium-high heat.
Season the chicken breasts with salt and pepper.
Grill the chicken for 5-6 minutes per side, or until cooked through.
Let the chicken rest for 5 minutes before slicing it into thin strips.
In a large bowl, combine the mixed greens, cherry tomatoes, sliced red onion, sliced cucumber, and chopped fresh cilantro.
In a separate small bowl, whisk together the lime juice, olive oil, minced garlic, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Top the salad with the sliced grilled chicken.
