CHOCOLATE MOUSSE

Ingredients

8 ounces semisweet chocolate, chopped
4 tablespoons unsalted butter, diced
4 eggs, separated
1/4 cup white sugar
1/2 teaspoon vanilla extract
1/2 cup heavy cream

Directions

In a double boiler, melt chocolate and butter together.
In a large bowl, beat egg yolks and 1/4 cup white sugar until thick and pale.
Stir in melted chocolate mixture and vanilla extract.
In another large bowl, beat egg whites until stiff peaks form.
In a third large bowl, beat heavy cream until stiff peaks form.
Fold egg whites into chocolate mixture until well blended.
Fold whipped cream into chocolate mixture until well blended.
Spoon mixture into individual dessert dishes.
