Ingredients
1 whole chicken (4-5 pounds)
4 cloves garlic, minced
1 lemon, zested and juiced
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
Fresh thyme sprigs
Directions
Preheat the oven to 425°F.
In a small bowl, combine the garlic, lemon zest, lemon juice, olive oil, salt, and pepper.
Pat the chicken dry with paper towels and place it in a roasting pan.
Rub the garlic-lemon mixture all over the chicken.
Stuff the chicken cavity with the fresh thyme sprigs.
Roast the chicken in the oven for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F.
Let the chicken rest for 10-15 minutes before carving and serving.
