CHICKEN PARMESAN

Ingredients

4 boneless, skinless chicken breasts
1 cup Italian seasoned breadcrumbs
1/2 cup grated Parmesan cheese
2 eggs
1 cup marinara sauce
4-6 slices mozzarella cheese
2 tablespoons olive oil

Directions

Preheat the oven to 400°F.
In a shallow dish, combine the breadcrumbs and Parmesan cheese.
In a separate shallow dish, whisk the eggs.
Dip each chicken breast in the eggs, then coat in the breadcrumb mixture.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken breasts to the skillet and cook for a few minutes on each side until they are browned.
Transfer the chicken breasts to a baking dish.
Top each chicken breast with a spoonful of marinara sauce and a slice of mozzarella cheese.
Bake the chicken in the oven for 20-25 minutes, or until the cheese is melted and bubbly.
Serve the chicken with additional marinara sauce and grated Parmesan cheese, if desired.
